Preheat oven 350°F
Line a cookie sheet with parchment.
Combine the flax meal with the water in a small bowl. Set aside.
Place the walnuts into a food processor . Process for 2 to 3 minutes until the walnuts start to become moist and a bit oily - like walnut butter. Add the almond meal and pulse to mix the two ingredients.
Place the ground nuts in a bowl. Add cocoa powder, baking soda, baking powder, cinnamon and salt.
Place the pitted dates in the food processor and pulse until they are in very small pieces.
Next add to the dates, the vanilla and the ground nuts, pulse a few times to combine.
Place the mixture back into the mixing bowl and add the chopped nuts and chocolate chips.
At this point, add the flax and water to the cookie mixture and fold the ingredients together.
Let the mixture sit for a few minutes before forming the cookies.
To bake the cookies, roll into balls and then flatten - the cookies will not spread out during baking.
Place the cookies in the pre-heated oven and bake for 15 -18 minutes.
Let cool for a few minutes on the baking tray and then carefully remove them and let them cool on a cooling rack.
