Yields1 Serving
1 cup fresh or frozen fruits
3 tbsp agave or maple syrup or more
¼ cup olive or sunflower oil
 ¾ cup almond milk
 1 tbsp vanilla
 ½ cup cane sugar
 ¼ cup rice flour
 ¼ cup coconut flour
 ¼ cup chestnut flour
 1 tsp xantham gum
 1 ½ tsp gluten-free baking powder
 1 tsp baking soda
1

Prepare the steamer. Bring the water to a boil and turn the stove down to low-medium.

2

Chop the fruits if necessary and mix them in a bowl with the agave or maple syrup.

3

Add apple cider to almond milk, leave for 10 minutes. Then add oil and vanilla.

4

In a bol, sift the flours, sugar, baking powder, baking soda and xatham gum.

5

Oil and place parchment paper at the bottom of the pan.

Place the fruit mixture at the bottom of the pan.

6

Mix liquids with dry ingredients.

Don't expect the dough to be liquid, it's actually going to be rather gooey and it's normal.

Spread the dough on top of the fruits.

7

Place knives or spoons at the bottom of the steamer so the cake pan doesn't touch it.

Steam for 40 minutes.

8

Remove the pan from the steamer and let it cool down before removing from the pan
