 1 vegan pie dough. I usually make my own, but it takes a lot of time.
 4 cups of fresh mango, chopped
 1 tbsp fresh lemon juice
 ¼ cup cane sugar
 3 tbsp organic corn starch
 1 tsp cinnamon

Either make the vegan dough or purchase it at the supermarket. Preheat oven at 375 degrees

In a large bowl, combine mango, lemon juice, sugar, corn starch, and cinnamon. Toss together until smooth and the sugar grit is mostly gone.

Transfer to a prepared pie crust. Place in the oven and bake for about 50 minutes until the crust is golden and the fruit is bubbly.

Note: If you're using a pre-made pie crust, make sure you take it out of its aluminium pan and place it into a glass pie pan. The crust underneath will cook better!
