There’s nothing quite as satisfying as a banana muffin. Sometimes I get the namwah bananas from the farm, Green Cay Farm that is. This is the CSA, Community Supported Agriculture farm in Boynton I belong to.

They are so delicious!

I get such a joyous feeling enjoying the fruits of nature. I get a sense of connection with the very essence of life. In me, around me, before me and after me.

Who knew that a banana muffin could give such a spiritual awareness and experience! 🙂

Bananas are known for their high potassium content, between 9 to 12% of the daily recommended (depending on the source of information). They have 17% of the daily recommended vitamin C and 3 grams of fiber.

Yes, they’re sweet, but they contain a lot of nutrients.

The namwah bananas are also called pisang awak in Malaysia.

Preparation:

Preheat oven to 350ºF.

Line muffin cups with paper cups. First, mix all dry ingredients first: flour, cinnamon, baking powder, baking soda and salt together in a large bowl.

In a separate bowl, whisk mashed banana, oil and almond milk. Then, mix banana mixture into flour mixture and combine.

Fill the muffin cups with the batter with a tablespoon. Finally, place the muffins in the oven.

Bake in the preheated oven until a tooth pick inserted in the center comes out dry, about 30 minutes or less.
